Broiled Chicken

Make following dressing: Mix ½ teaspoon salt, ¼ teaspoon paprika and 2 teaspoon garlic vinegar. Blend well and 1/3 cup olive oil.

Put split chicken meaty side up after first greasing it. Be sure each chicken gets equal amount of heat and place 2" from flame. Watch closely and broil slowly. As soon as brown brush again and turn minute later. With bony side up, brush heavily with dressing so shell-like cavities hold some of it. Baste frequently especially wings and legs. 20 minutes, watchful broiling and basting and each side exposed to heat 3 times for 2# chicken.

Important Step

When start to broil place covered roasting pan in oven so it gets good and hot inside. Place in pan 3 tablespoon water and 1 tablespoon basting mixture. Take "done" chickens, place in roaster, basting and covering them. Keep oven hot. Steaming makes chickens moist and keeps them. When ready to serve pour liquid remaining over them.
