1 teaspoon mustard
1 teaspoon salt
1 teaspoon sugar
2 egg yolks
2 tablespoon lemon juice
2 tablespoon vinegar
1½ cup olive oil
Few grains cayenne
Mix dry ingredients, add egg yolks and when well mixed add ½ teaspoon vinegar. Add oil gradually and stir constantly. It's mixture thickens thin with vinegar or lemon juice. If oil added too rapidly will have curdled appearance - may be restored by adding to yolk of another egg. Keep mixture cold.
