6 egg yolks
½ cup cold H²O
1½ cup sugar
½ teaspoon vanilla
½ teaspoon lemon or orange
1½ cup cake flour
½ teaspoon salt
6 egg whites
¾ teaspoon cream tartar
Beat egg yolks until light, add cold and sugar very thick then add vanilla and lemon or orange. Add, fold in cake flour and salt. Beat egg whites frothy, add cream tartar until stiff. Oven 325º - 1 hour in ungreased angel cake pan.
